Moroccan Tajine with beef

Tagine is the most famous food made in Morocco. It can be made of lamb, fish, chicken or beef.
Tagine, often written "tajin," is also a classic Moroccan cooking pot with a round base and low sides made of ceramic or unglazed clay.

Equipment

  • 1 large pot or tajin

Ingredients
  

  • 2 lbs beef cut into pieces (1 kg)
  • 3 garlic cloves (optional)
  • 2 medium onions, chopped
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 1 teaspoon turmeric
  • 1 teaspoon saffron threads
  • 1 teaspoon black pepper
  • ½ preserved lemon (salty lemon)
  • 1 teaspoon ginger 
  • ¼ cup olive oil
  • 1 cup water 
  • 1 large handful of fresh cilantro
  • 6 potatoes, diced
  • 1 tomato, diced
  • ½ cup green olives

Instructions
 

  • In a large bowl mix the garlic, onion, cilantro, chopped preserved lemon, and the meat.
    Add spices, mix it well.
    Then transfer the food to the tagine. Add olive oil, potatoes, tomatoes, olives and water.
    Cover the tagine with the lid.
    Set the oven to 285° F (140° C) and turn the oven on. Let it cook for 2 to 4 hours. Check from time to time to see if the meat is cooked. When it falls off the bone it is ready to eat.
    Serve the tagine with some bread and enjoy.
