Put the vermicelli and oil in a big pot. Rub it between your fingers until the oil is all mixed in.Get a steamer pot. It has 2 levels. Fill the bottom pot half way with water. Add the cinnamon sticks and little bit of salt. Let it boil.First steaming: Put the vermicelli in the top steamer pot. Let it steam for 20 minutes.Meanwhile, boil 3 cups of water in a pan.Put the top steamer with vermicelli in a big bowl. Pour 1 cup of hot water on top of the vermicelli. Mix it well. Add the second cup of water. Make sure it get mix well. Add the third cup of water while stirring it.Drain the water.Second steaming: Add little bit of salt. Then put it back on the steamer (over the cinnamon water). Let it cook for 10 minutes.Put the vermicelli pot back in a bowl and sprinkle it with a little bit of cold water. Fluff it with a mixing spoon. Mix it really well so it doesn't stick together. Add raisins and little bit of butter. Mix it well. Third steaming: Put vermicelli pot back on top of the cinnamon water. Let it cook for 10 - 15 minutes.Put seffa on a plate. Add little bit of butter. Mix it well.After that start decorating it with cinnamon, powdered sugar, and crushed roasted almonds as seen in the picture.Bon apettit
