Moroccan soup Harira (7arira) for Ramadan

Harira is a Moroccan soup that is usually served during Ramadan at "iftar" time.
Ifrar means breakfast, but in Ramadan Muslims eat at sunset.

  • 1 Pressure cooker

Ingredients
  

  • 1/2 lb stew meat (150 grams)
  • 1 large onion
  • 1 tsp salt
  • 1 tsp black pepper
  • 6 - 8 cups water (as needed)
  • 1/2 tsp cumin
  • 1/2 cup lentils
  • 1 cup chickpeas (soaked and peeled)
  • 3 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 6 tomatoes (can also use tomato sauce)
  • 1 bouquet chopped cilantro (divided)
  • 1 bouquet chopped parsley   (divided)
  • 1 tsp butter
  • 1 tsp smen (preserved butter) (optional)
  • 4 tbsp all purpose flour (as needed)
  • 1 cup vermicelli noodles

Instructions
 

  • Put meat, onion, 2 or 3 cups of water in a large pot on the stove top or pressure cooker.
    Add 1/2 bouquet chopped parsley and cilantro. Add spices, butter or (smen preserve if you have it), lentils, chickpeas, tomato paste, and vegetable oil.
    Cook for 30 minutes in a pressure cooker or 45 to 50 for top of stove.
    - Put tomatoes in a bowl. Use a mixer to mix the tomatoes. It will look like tomato sauce when it is finished. You can add little of water if it is too thick.
    Add the tomato sauce to the pot. Boil for about 5 minutes.
    - Meanwhile, in a bowl add all purpose flour, salt, and 1 - 2 cups of water depend how much flour you put. If you want your harira to be thick you can add 2 more spoons of flour. Use a mixer to combine the ingredients.
    Add the rest of the parsley and cilantro to pot. When it starts to boil add flour to thicken the harira while you stir. Cook for 7 minutes.
    After that add vermicelli noodles. Make sure you keep siring the pot for approximately 5 minutes When the vermicelli noodles are cooked it's time to eat.
